Marinated Chicken Kebabs with Cucumber and Yogurt Salad

We’re set for the hottest weekend so far this year, which means many of you will be lighting up the barbeque and enjoying some al fresco fun!  So, we thought we’d share one of our favourite recipes ideal for outdoor grilling, which is simple, tasty and will impress all your family and friends!

Serves 4-6

Prep and Cooking Time – 55 minutes

Ingredients:

125g plain yogurt

490g plain yogurt

2 Cloves Garlic, crushed

1 tbsp fresh ginger, grated

1 tsp garam masala

1 tsp ground turmeric

2 tsp lemon zest, plus 2 tbsp lemon juice

Salt and pepper

750g skinless chicken breast, diced

Oil for grill grates

 

Method:

1 Combine the yogurt, garlic, ginger, garam masala, turmeric, lemon zest and juice, and ½ teaspoon each of salt and pepper in a bowl. Add the chicken and stir to coat all the meat. Let marinate for 15 minutes, then thread onto six large metal or soaked wood skewers.

 

2 Once your barbecue has reached temperature, grill the skewers, turning occasionally, until the chicken is cooked through and tender – around 8-10 minutes.

 

3 Serve with grilled flatbreads and Cucumber and Yogurt Salad.

Cucumber and Yogurt Salad

Prep Time – 10 minutes

This simple but tasty side salad goes so well with these marinated chicken skewers, as well as many other barbecued delights including lamb koftes and burgers.

Ingredients:

375g cup plain yogurt

½ cucumber, seeded and cut into slim one-inch batons

1 spring onion, finely sliced

1 handful coriander, chopped

Salt and pepper to taste

 

Method:

 1 Combine the yogurt, cucumber, spring onion, coriander. Stir Well and season to taste with salt and pepper.
